Okay, I've just come back from a "cabane à sucre" or a "sugar shack" with Kim and co. and holy crap do these canadians eat a lot of maple syrup. Syrup on the eggs, syrup on the ham, syrup on the beans, syrup on the suasages, syrup in the coffee, syrup with the sugar pie, syrup on the pancakes ... and Jaan ... listen to me very carefully: make yourself some crackling ("oreilles du Christ" or "ears of Christ" here - I have no idea why) and drown it in maple syrup ... it's the bees freekin' knees. What once were shacks used for the seasonal processing of maple syrup from the trees have turned into rather large industrious looking restaurants that line the highway. Once a year these large halls are filled with people intent on getting really really fat. Out the back they have a shed full of "exotic" animals for you to look at for a dollar, a bouncy castle and horse-cart rides. Right now I'm just trying to equal out my sugar/blood ratio as all this sticky sweetness coarses slowly through my veins and my brain and - ooh - there it is ... i just got diabetes.
